Chicken Kebabs

Ingredients:
• 1 pound of ground chicken
• 1 bunch ( 4 or 5 ) green spring onions finely sliced
• 1 big onion thinly sliced
• 1 tsp ginger paste
• 2 tsp garlic paste
• 2/3 green chilies finely chopped (optional)

• 1 bunch of fresh coriander chopped up
• 1 tbsp of plain yogurt
• 1 egg
• 3/4 tbsp of Olive Oil

. 1 tsp. of Paprika Powder
• 1/2 packet of Spice Mix for Chappli Kabab (Shan Brand) – This can be found at your local Ethnic Markets.
Directions:
1. Set your oven on to 350 at Bake.
2. In a big bowl mix all ingredients except the thinly sliced onions and olive oil.
3. Set a baking tray with foil and spray the tray with some olive oil.
4. In a small bowl add some olive oil for basting the kebabs. Rub some oil on your left palm and take a small amount of the chicken mixture and shape it like a kebab. Place the kebab on the baking tray and do the same thing till you finish the chicken mixture. You may not need to rub oil on your palm every time you make a kebab. I’ve noticed that after 3 or 4 kebabs I need to dab some oil on my palm. If you notice that the chicken is sticking to your hand then it’s time to rub some oil on your palm.
5. Once all kebabs are lined on the tray pour 2/3 tbsp. of Olive Oil over the kebabs and cover and bake for 20 minutes.
6. Flip the kebabs after 20 minutes and then bake for another 20 minutes uncovered. If you see that the chicken is not cooked then bake it for another 5 or 10 minutes. However you want to make sure you don’t overcook the kebabs because they will become dry. I know when they are cooked from experience, but seeing the color change to a nice dark brown and also sometimes by cutting one kebab and seeing that the inside is brown and not pink are great indicators that the kebabs are done. If you notice that they are sticking to the foil then add a little bit more oil and/or place the tray slightly higher from the heat burners in the oven.
7. While the Kebabs are being baked sauté the thinly sliced onions on a skillet till they are translucent and garnish over the kebabs before serving. Serve the kebabs with mint or coriander chutney or a hot sauce of your choice.

Ways to Eat Kebabs

  • Just on it’s own with salad.
  • Make a burger with the kebabs in a bun, add onions, tomatoes, avocado and mint chutney. My kids love it as a burger and of course they need fries with this.
  • Add the kebabs in a Pita Pocket with onions, tomatoes, avocado and couscous.
